Sheep: The Age of Kings.
When your exploring Scouts uncover sheep, have them sent directly back to your Town Center. Not only do sheep make a convenient early food source, but also they can uncover more of the map. And if they happen to get converted by someone else along the way, even better; they just gave away the location of your enemy's units. Nobody suspects that a sheep could be a spy.
Avoid Sea Monsters.
When you're constructing important buildings such as an additional Town Center or castle, be sure to put them out of range of sea attacks. After all, you don't want to sit by and watch your kingdom go up in flames just because you were keen on having a waterfront view.
Make Them Run the Gauntlet.
When playing against the computer, try building a wall around your town. Within the area facing the enemy's camp, leave a narrow hallway down to your gate in the shape of a sideways U. Place as many Gun Towers and Archers as possible on each side of this "gauntlet." Then send a Scout out to lure some troops into your trap. As your scout comes back through the gate, the enemy follows, only to be picked off by the Towers and the Archers. After the attack, gather your forces and rain destruction on your depleted enemy.

Combine Unit Types.
In the original Age of Empires, it was possible to win by using large armies of a single unit type, such as Hoplites or Cataphracts. In AoE II, military units are more balanced and all have weaknesses that smart opponents will exploit. Therefore, it's vital to attack with combined unit types in formation. A simple example is to surround your Catapults with infantry to protect them. Read through the unit charts to uncover the various weaknesses and experiment with different combinations to see what works best.
Build New Docks: The Age of Kings.
Just as wood-gathering Villagers eventually end up far from the lumber camp, so can Fishing Ships empty out nearby supplies and sail long distances to bring back their catch. Building a new dock closer to the fishing holes can shorten the travel time and speed up resource acquisition. Plus, a second or third dock is always a nice addition when you want to start building up a large navy.
Queue It Up: The Age of Kings.
Unit-producing buildings now have queues that allow you to line up more units so you don't have to wait for one to finish to start another one. At the beginning of the game, keep your Villager queue full; you'll need as many as you can pump out in the first minutes of a game. Setting up the queue for military units is also an effective way of building up an army that requires little management.
Gold Is the Key: The Age of Kings.
Even more so than in the first Age of Empires, gold is the key to victory. If you can limit your enemy's supply of gold, you will keep him or her from being able to build the most powerful units. One good tactic is to send a Villager or two to unclaimed (or even claimed) gold stockpiles, and build towers. They'll chase off any existing mining ventures and require your opponent to make an expensive military strike to retrieve the gold.
Resources: The Age of Kings.
If you're running into a serious shortage of resources, you can obtain more at the market. It's expensive, so don't do it unless you have to (there's a 30 percent markup which can be reduced by researching technologies). But if you're in a serious bind for wood, it can be worth it in the long run to buy a few bundles of sticks.
Garrison Relics: The Age of Kings.
In addition to garrisoning troops, housing a Relic in your monastery will produce gold. While not as much as actually mining gold, it provides a nice supplement of the most valuable resource. As soon as you have a monastery and a Monk, send him out to grab any nearby Relics.
Guerilla Scout: The Age of Kings.
That first Scout you start out with is an invaluable resource for exploration, but he can also be incredibly useful for guerilla tactics. If you stumble across any enemy Villagers or sheep in your early travels, harass or kill the Villagers (just don't let two or three of them surround your Scout and bring him down) and claim the sheep for your own or kill them so you enemy can't use them.
Teutonic Knightmares.
As one of the most powerful units in the game, a group of Teutonic Knights can take down almost anything. With their resistance to conversion and some armor upgrades, these Knights can make it tough on opponents. Conversely, if you're being attacked by Teutonic Knights, fight back with Archers and other ranged weapon troops; going toe-to-toe with these brutes is suicide.
Dark Age Villagers.
Before you advance out of the Dark Age, you'll need a good amount of Villagers to provide the foundation for your empire. You should have between 20 and 30 before you use your Town Center to advance into the next age.
